The art of brewing

Every leaf responds differently. These brewing notes are starting points for a Western-style cup; adjust to your tea and taste.

01 / Water

Let it cool.

Delicate green teas prefer cooler water. Black teas and most herbal infusions welcome water close to boiling.

02 / Leaves

Give them room.

Start with 2–3 grams per 250 ml. A roomy infuser lets whole leaves open and release their flavour.

03 / Time

Taste as you go.

A longer steep makes a stronger cup, but can add bitterness. Remove the leaves when the balance feels right.

True tea comes from Camellia sinensis. Herbal infusions use other plants; blends may contain both. Caffeine varies by leaf, portion and brewing method. This collection is a broad introduction, not an exhaustive list.
